Vegan Chocolate Cake

In our quest to try out a vegan diet, decided that we would definitely miss cake, well the baking part anyway – we do a lot of that πŸ™‚ The girls found this recipe on the internet which is very easy to put together and quite yummy so thought I would blog it for future reference. Also like that it is in cups πŸ™‚

Vegan Chocolate Cake

1 1/4 cup flour
1 cup sugar
1/3 cup cocoa powder
1 tsp baking powder
1/2 tsp salt

Mix together then add

1 cup warm water
1 tsp vanilla
1/3 cup vegetable oil
1 tsp cider vinegar

Mix and pour into tin. Bake at gas 4 for approx 20-30 mins.

There is a topping for the cake which we haven’t tried but would be good for special occasions!

1/2 cup sugar
4 tbsp vegan margarine
2 tbsp soy milk
2 tbsp unsweetened cocoa powder
2 tsp vanilla extract

If anyone else has any other good tried and tested vegan recipes, cakes or otherwise would be most welcome πŸ™‚

    A recipe that goes down well here, though I can imagine lots of other kids turning their nose up at it. It is a Ken hom recipe for a vietnamese (i think tofu and veg stew. (we eat it so often it’s just called ‘Ken hom’ in our house πŸ™‚ ) Really quick as well

    too lazy to find the book, so this is the most common, rough version, you can use any veg you fancy really.

    about 400g firm tofu (one of the blocks of Cauldrom foods tofu is about right)
    1/2 cauliflower, in florets
    3-4 carrots, sliced
    sweetcorn or baby corn
    Broad beans, or french beans etc.
    1 tin coconut milk
    4 TBSP soy sauce

    cube tofu, fry to brown it (deep fry is nicest, but I just shallow fry). Add cocnut milk and another tinfull of water and soy sauce and carrots. Bring to boil and simmer for about 5 mins. Add rest of veg and simmer until cooked (say 15 mins) add more water if it needs it. Serve with rice.

    Beany sausage bake.

    Another easy popular one. Use vegan sausage – linda M are now apparenlty ‘Vegan Friendly’ – maybe they smile at you?

    2 x packs LM sausages (about 400g-ish)
    2 x tin Kidney beans in chilli sauce
    1 x large onion, sliced
    grainy mustard

    Defrost the sauages a bit, cut into 1/3rds, fry for a bit, + onion and fry for a bit more. Add Chilli Beans and a bit of the mustard (and a bit of water if yoiu think it will need it – I usually do), cook gently for alittle bit.

    Peel potatoes and slice thinly (food processor good here) or you can top with mash.

    Pur sausage/bean mix in a cassrole dish, layer pot slices on top. Dab with some marg and a some mustard. Cover with foil.

    i’m a bit vague on the cooking times here, it’s pretty easy going.. Cook for a bout 2 hours on Gas Mark 3, remove the foil and cook for another 30- 45 mins to brown the top (probably up the heat abit as well).

    Do your or your girls like curry flavours? Did you see the spicy pancake link I put of FF? They were totally yummy and no eggs. It was something like gram flour plus enough water to make into pancakebatter with chopped onion, corriander, green chilli, garam masala. That was it. Very tasty.
