Chickpea Curry

I adapted a chickpea curry recipe I found and it was so yummy I needed to make sure I made a note of it for future use. So here it is for me and anyone else to use 🙂

All measurements are approximate.

2 tbsp sunflower oil
knob of butter
1 onion, diced
2 cloves of garlic, diced finely
1-2 tsp ground ginger

Saute all of the above for approx 5 mins. Then add;

2 x tins Chickpeas
1 x tin chopped tomatoes
Fill tin with water and add that too
1tsp cumin
1tsp coriander
1tsp turmeric
1tsp salt
1/2tsp garam masala
1tsp cayenne pepper

Cover and cook on the hob, low-medium heat for approx 30 mins.

Chickpea Curry

Serves 4.

We had ours with left over dahl and rice 🙂
